Instructions
- Mix all marinade ingredients in a shallow dish or a large plastic bag.
- Cut the peppers, onion, and zucchini into large chunks; keep mushrooms and tomatoes whole.
- Skewer the vegetables onto kabob skewers, using about 16 pieces per skewer.
- Marinate the skewers for at least 15-20 minutes, or overnight for more flavor.
- Grill the kabobs over medium heat for 7 minutes on one side, then flip and cook for another 7 minutes.
- Alternatively, cook on a grill pan or bake in the oven at 400°F for 10-15 minutes.
- Serve with sides of choice.
