Veggie Kabobs

Ingredients

The vegetables

  • ½ each yellow pepper
  • ½ each orange pepper
  • ½ each green pepper
  • ¼ each red onion
  • 1 medium zucchini
  • 10 each crimini or white mushrooms
  • 10 each cherry or grape tomatoes

The marinade

  • 1 ½ teaspoons garlic
  • 2 teaspoons Greek oregano
  • 2 teaspoons thyme
  • 2 tablespoons lemon juice
  • 2 tablespoons Tamari or soy sauce
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 cup veggie broth
  • drizzle none olive oil (optional)

To serve

  • as needed none rice
  • as needed none Greek potatoes
  • as needed none vegan tzatziki

Instructions

  1. Mix all marinade ingredients in a shallow dish or a large plastic bag.
  2. Cut the peppers, onion, and zucchini into large chunks; keep mushrooms and tomatoes whole.
  3. Skewer the vegetables onto kabob skewers, using about 16 pieces per skewer.
  4. Marinate the skewers for at least 15-20 minutes, or overnight for more flavor.
  5. Grill the kabobs over medium heat for 7 minutes on one side, then flip and cook for another 7 minutes.
  6. Alternatively, cook on a grill pan or bake in the oven at 400°F for 10-15 minutes.
  7. Serve with sides of choice.
