Vegan Green Curry Veggie Kabobs

assorted veggies (bell peppers, mushrooms, onions, summer squash, etc.)

lite coconut milk

green curry paste

soy sauce or tamari

sriracha (if desired)

salt and pepper (if desired)
Instructions
- Cut the veggies into uniform chunks and thread them onto skewers or use pre-assembled skewers.
- If using wooden skewers, soak them in water for about 30 minutes.
- Whisk together the remaining ingredients in a large baking dish.
- Place the kabobs in the dish, cover, and refrigerate for at least 2 hours, turning every 30 minutes and brushing with the marinade.
- For indoor grilling, heat the grill to high, spray with oil, and cook the kabobs for about 10 minutes on each side, basting occasionally.
- For charcoal or gas grills, brush oil on the grill rack and cook the kabobs until done, turning and basting occasionally.
