Ingredients

  • 3 cups old-fashioned oats
  • tablespoons chai seasoning or pumpkin pie spice
  • teaspoons baking soda
  • ¾ teaspoon fine sea salt
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 1 cup mashed cooked butternut squash
  • ½ cup maple syrup
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • optional turbinado sugar for sprinkling

Instructions

  1. Preheat the oven to 375°F and prepare a muffin pan.
  2. Blend the oats until they reach a flour-like consistency, then mix in the chai seasoning, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, milk, butternut squash, maple syrup, coconut oil, and vanilla extract.
  4. Combine the dry ingredients with the wet ingredients and stir until just combined.
  5. Portion the batter into the muffin cups and sprinkle with turbinado sugar if desired.
  6. Bake for 15-18 minutes until a toothpick comes out clean, then cool for 5 minutes before serving.
