Instructions
- Preheat the oven to 350°F and place a rack in the middle.
- Process hazelnuts and coconut, then add dry ingredients and pulse to combine.
- Mix in wet ingredients until a dough forms, adding more hazelnut or coconut meal if necessary.
- Flatten the dough between parchment paper and roll to about ¼ inch thickness.
- Transfer to a baking sheet and bake for about 12 minutes until edges are brown.
- Cool completely and cut into desired cookie sizes.
- For ganache, heat non-dairy milk, then add chocolate, maple syrup, and coconut oil, whisking until melted.
- Brush ganache onto cookies and garnish with chopped hazelnuts, then refrigerate to set.
