Cheesy Bacon Ranch Stuffed Chicken

Ingredients

The filling

  • 2 slices center cut bacon
  • 2 oz 1/3 less fat cream cheese, softened
  • 2 tablespoons light mayonnaise
  • 2 oz shredded 2% milk sharp cheddar cheese
  • 3 teaspoons dry ranch seasoning, divided

The chicken

  • 4 pieces boneless skinless chicken breasts (6 oz each)

The coating

  • 4 teaspoons all-purpose flour
  • 1 large egg white, beaten
  • cup panko breadcrumbs
  • 2 teaspoons canola oil

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cook the bacon until crispy, drain, and crumble it into small pieces.
  3. Mix cream cheese, mayonnaise, cheddar cheese, and 1 teaspoon of ranch seasoning in a bowl.
  4. Slice the chicken breasts almost all the way through and open them up.
  5. Spread the cheese mixture inside the chicken and top with crumbled bacon.
  6. Close the chicken breasts and coat them with a mixture of flour and the remaining ranch seasoning.
  7. Dip the coated chicken in beaten egg white and then in panko breadcrumbs.
  8. Heat oil in a skillet over medium-high heat and cook the chicken for about 1 minute on each side until golden.
  9. Transfer the chicken to the baking sheet and bake for 25-30 minutes until fully cooked.
