Kuromame (Sweetened Black Beans)

Instructions
- Rinse and drain the black soybeans.
- In a saucepan, combine water, sugar, soy sauce, salt, and bicarb soda, and heat until the sugar dissolves.
- Remove from heat and add the black soybeans while the mixture is still hot.
- Cover the saucepan and let it sit for 7-8 hours or overnight.
- Add rusty nails wrapped in cloth to the saucepan and let it sit overnight at room temperature.
- The next day, bring the soaked beans to a boil over high heat.
- Remove any scum that forms on the surface.
- Add more water and boil again, removing scum as needed.
- Place a drop lid on top and simmer over low heat for 3-4 hours.
- Check occasionally to ensure the beans are covered with water and add more if necessary.
- Once the beans are soft, remove from heat and serve.
