Kuromame (Sweetened Black Beans)

Ingredients

The beans

  • 100 g black soybeans

The sweetening mixture

  • 90 g caster sugar
  • 2 cups water
  • ½ tbsp soy sauce
  • ¼ tsp salt
  • ¼ tsp bicarb soda

Instructions

  1. Rinse and drain the black soybeans.
  2. In a saucepan, combine water, sugar, soy sauce, salt, and bicarb soda, and heat until the sugar dissolves.
  3. Remove from heat and add the black soybeans while the mixture is still hot.
  4. Cover the saucepan and let it sit for 7-8 hours or overnight.
  5. Add rusty nails wrapped in cloth to the saucepan and let it sit overnight at room temperature.
  6. The next day, bring the soaked beans to a boil over high heat.
  7. Remove any scum that forms on the surface.
  8. Add more water and boil again, removing scum as needed.
  9. Place a drop lid on top and simmer over low heat for 3-4 hours.
  10. Check occasionally to ensure the beans are covered with water and add more if necessary.
  11. Once the beans are soft, remove from heat and serve.
