Sweet Red Bean Soup

Instructions
- Wash the azuki beans and drain the water.
- Place the beans in a pot with plenty of water and bring to a boil, then discard the cooking water.
- Add 3 cups of water to the beans and simmer for about 1 hour until soft.
- Once cooked, add sugar and salt, stirring to mix, and simmer until the soup thickens.
- Toast the mochi using an oven grill or microwave until cooked.
- Serve the soup with two pieces of toasted mochi in a bowl, garnished with sesame seeds.
