Homemade Red Bean Paste

Ingredients

  • 200 g Dry Adzuki Beans
  • 200 g Sugar
  • to cook Water Water

Instructions

  1. Soak the adzuki beans overnight after washing them.
  2. Drain the soaking water and place the beans in a pot, then boil and simmer for about 15 minutes.
  3. Drain the cooking water and repeat the boiling process two more times to remove astringency.
  4. Drain the beans completely, return them to the pot, and add sugar, stirring with a wooden spatula.
  5. Continue kneading until the mixture thickens and loses its glossiness, then turn off the heat.
  6. For Koshi-an, blend the cooked beans in a food processor before adding sugar, then follow the same kneading process.
