Instructions
- Soak the adzuki beans overnight after washing them.
- Drain the soaking water and place the beans in a pot, then boil and simmer for about 15 minutes.
- Drain the cooking water and repeat the boiling process two more times to remove astringency.
- Drain the beans completely, return them to the pot, and add sugar, stirring with a wooden spatula.
- Continue kneading until the mixture thickens and loses its glossiness, then turn off the heat.
- For Koshi-an, blend the cooked beans in a food processor before adding sugar, then follow the same kneading process.
