Shiro An (White Bean Paste)

Ingredients

  • 200 g Dry white kidney beans
  • 180 g Sugar
  • a pinch Salt

Instructions

  1. Soak the white kidney beans in water overnight.
  2. Drain the water and hull the beans.
  3. Place the hulled beans in a saucepan, cover with water, and cook for about 1 hour and 30 minutes until soft.
  4. Drain the water and beat the cooked beans with a hand-held electric mixer.
  5. Add sugar and a pinch of salt, stirring constantly over low heat until the paste thickens.
