Ingredients

Sweet Bean Paste

  • 50 g Azuki bean
  • 50 g caster sugar
  • 50 g White bean
  • 50 g caster sugar

Yudane

  • 50 g bread flour
  • 40 ml Boiling hot water

Bread Dough

  • 120 ml milk
  • 1 large egg
  • 25 g sugar
  • 3 g dry yeast
  • 250 g bread flour
  • 4 g salt
  • 40 g butter

Instructions

  1. Soak the dry beans for two nights before baking.
  2. Make the sweet bean paste and yudane the night before baking.
  3. Combine milk, egg, sugar, yeast, bread flour, and salt in a mixer and knead for about 15 minutes.
  4. Add butter and knead for another 15 minutes until smooth.
  5. Let the dough rise in a greased bowl until doubled in size, about 45 minutes to 1 hour.
  6. Divide the dough into 12 equal balls and let them rest.
  7. Wrap each sweet bean paste ball with the dough and shape into rolls.
  8. Place on a lined baking tray and cover for second proofing for 20-30 minutes.
  9. Preheat the oven to 356°F (180°C).
  10. Brush with beaten egg or milk, sprinkle with sesame seeds, and bake for 20 minutes.
  11. Cool on a wire rack.
