Instructions
- Make Yudane the night before by mixing bread flour with boiling water and refrigerate it overnight.
- In a stand mixer bowl, combine room temperature milk, sugar, butter, and yeast, then add the Yudane.
- Add the bread flour and salt, then knead the dough on low speed until combined, then increase speed and knead for 20 minutes.
- Shape the dough into a ball and let it rise in a greased bowl, covered, for 45-60 minutes until doubled in size.
- Punch down the dough, divide it into two equal parts, and let them rest for 20 minutes.
- Roll each piece into a rectangle, fold tightly, and shape it into a loaf.
- Place the shaped dough in a greased loaf tin and let it rise for another 30 minutes.
- Preheat the oven to 365°F (185°C) and bake the bread for 25-30 minutes.
