Ingredients

Yudane

  • 50 g Bread flour
  • 40 ml Boiling water

Bread

  • 150 ml Milk (room temperature)
  • 15 g Sugar
  • 3 g Dry instant yeast
  • 10 g Unsalted butter (room temperature)
  • 200 g Bread flour
  • 5 g Salt

Instructions

  1. Make Yudane the night before by mixing bread flour with boiling water and refrigerate it overnight.
  2. In a stand mixer bowl, combine room temperature milk, sugar, butter, and yeast, then add the Yudane.
  3. Add the bread flour and salt, then knead the dough on low speed until combined, then increase speed and knead for 20 minutes.
  4. Shape the dough into a ball and let it rise in a greased bowl, covered, for 45-60 minutes until doubled in size.
  5. Punch down the dough, divide it into two equal parts, and let them rest for 20 minutes.
  6. Roll each piece into a rectangle, fold tightly, and shape it into a loaf.
  7. Place the shaped dough in a greased loaf tin and let it rise for another 30 minutes.
  8. Preheat the oven to 365°F (185°C) and bake the bread for 25-30 minutes.
