Sekihan (Sticky Red Bean Rice)

Ingredients

The rice and beans

  • 2 cups glutinous rice
  • ¼ cup azuki beans
  • cups water
  • 1 tsp salt

The garnish

  • to taste black sesame seeds

Instructions

  1. Wash and drain the glutinous rice, setting it aside.
  2. Wash and drain the azuki beans.
  3. In a pressure cooker or Instant Pot, combine the azuki beans and water, then cook.
  4. After cooking, release the pressure and ladle the water back and forth to oxidize the beans.
  5. Add the washed rice and salt to the cooker.
  6. Cook for 3 minutes.
  7. Release the pressure naturally.
  8. Stir the rice gently and serve with black sesame seeds on top.
