Kuri Chestnuts Sekihan

Ingredients

The rice and beans

  • 2 cups glutinous rice
  • ¼ cup azuki beans
  • cups water
  • 1 tsp salt

The chestnuts

  • 12 chestnuts
  • Black sesame seed and salt (for sprinkling)

Instructions

  1. Soak the chestnuts in water overnight.
  2. Peel the outer shell and astringent skin from the chestnuts.
  3. Wash and drain the glutinous rice.
  4. Wash and drain the azuki beans.
  5. In a pressure cooker, combine 2¼ cups of water and the azuki beans, then cook under high heat.
  6. When the pressure indicator rises, reduce heat to low and cook for 5 minutes.
  7. Release the pressure rapidly, then scoop and pour back the water to extract color.
  8. Add the rice, prepared chestnuts, and salt to the cooker, then cook under high heat until the pressure rises again.
  9. Reduce heat to low and cook for 3 minutes, then turn off heat and allow pressure to release naturally.
  10. Stir the rice gently and serve with black sesame and salt sprinkled on top.
