Kuri Chestnuts Sekihan

Instructions
- Soak the chestnuts in water overnight.
- Peel the outer shell and astringent skin from the chestnuts.
- Wash and drain the glutinous rice.
- Wash and drain the azuki beans.
- In a pressure cooker, combine 2¼ cups of water and the azuki beans, then cook under high heat.
- When the pressure indicator rises, reduce heat to low and cook for 5 minutes.
- Release the pressure rapidly, then scoop and pour back the water to extract color.
- Add the rice, prepared chestnuts, and salt to the cooker, then cook under high heat until the pressure rises again.
- Reduce heat to low and cook for 3 minutes, then turn off heat and allow pressure to release naturally.
- Stir the rice gently and serve with black sesame and salt sprinkled on top.
