Kuri Gohan

Ingredients

The rice

  • 1 ¾ cups short grain rice
  • ¼ cup glutinous wheat or sweet rice
  • 2 cups water
  • 1 tsp salt
  • 1 tbsp sake

The chestnuts

  • 500 g chestnuts

The garnish

  • 1 tsp black sesame seeds

Instructions

  1. Prepare the chestnuts by removing the outer hard skin using kitchen scissors, leaving the astringent skin intact.
  2. Place the chestnuts in a pot and cover them with water.
  3. Bring the water to a boil, then reduce the heat and simmer for about 20 minutes.
  4. Drain the hot water and add cold water to cool the chestnuts for handling.
  5. Carefully remove the astringent skin from the chestnuts.
  6. Wash the short grain rice and glutinous wheat until the water runs clear, then drain completely.
  7. In a rice cooker, combine the washed rice, glutinous wheat, 2 cups of water, salt, and sake.
  8. Place the cooked chestnuts on top of the rice mixture.
  9. Cook the rice according to the rice cooker instructions.
  10. Once cooked, stir gently to avoid breaking the chestnuts, then serve in bowls and sprinkle with black sesame seeds.
