The rice

Instructions
- Prepare the chestnuts by removing the outer hard skin using kitchen scissors, leaving the astringent skin intact.
- Place the chestnuts in a pot and cover them with water.
- Bring the water to a boil, then reduce the heat and simmer for about 20 minutes.
- Drain the hot water and add cold water to cool the chestnuts for handling.
- Carefully remove the astringent skin from the chestnuts.
- Wash the short grain rice and glutinous wheat until the water runs clear, then drain completely.
- In a rice cooker, combine the washed rice, glutinous wheat, 2 cups of water, salt, and sake.
- Place the cooked chestnuts on top of the rice mixture.
- Cook the rice according to the rice cooker instructions.
- Once cooked, stir gently to avoid breaking the chestnuts, then serve in bowls and sprinkle with black sesame seeds.
