Ingredients

The base

  • 2 to 3 cups very hot cooked brown rice
  • 2 pieces eggs
  • splashes of tamari

The toppings

  • 1 piece scallion, finely chopped
  • sesame seeds, for sprinkling
  • optional extra egg yolks
  • thinly sliced nori
  • Japanese pickles or pickled ginger
  • micro greens
  • splash of rice vinegar or umeboshi vinegar
  • avocado slices
  • roasted broccoli

Instructions

  1. Cook the brown rice until very hot.
  2. Scoop the rice into two bowls and crack one egg over each bowl.
  3. Stir vigorously with chopsticks until the egg is fully incorporated and the mixture turns pale yellow.
  4. Add splashes of tamari for seasoning and mix well.
  5. Top with scallions, sesame seeds, and any additional toppings you desire.
  6. Serve with extra tamari on the side.
