Instructions
- Soak dry hijiki in 500 ml of water for about 30 minutes.
- Cook rice in a rice cooker.
- Cut carrot into matchsticks and shell edamame.
- Combine all seasoning ingredients in a small bowl.
- Heat sesame seed oil in a frying pan and cook chicken mince.
- Add carrot and edamame to the pan and cook for a few more minutes.
- Pour the combined seasoning over the chicken, carrot, and hijiki, and cook until the liquid evaporates.
- Once the rice is cooked, add the hijiki and chicken mixture on top and steam together for 10 minutes.
- Stir the hijiki and chicken into the rice, add edamame, and mix well.
- Serve in a rice bowl and garnish with sesame seeds and bean sprouts.
