Ingredients

The rice

  • 2 cups rice

The hijiki and vegetables

  • 10 g dry hijiki
  • 50 g edamame
  • ½ carrot carrot
  • 50 g chicken mince

The seasoning

  • 2 tbsp soy sauce
  • ½ tsp salt
  • 1 tbsp sake
  • 1 tbsp mirin
  • 1 tsp sugar

The garnishes

  • 1 tbsp sesame seed oil
  • a pinch sesame seeds
  • a pinch bean sprouts

Instructions

  1. Soak dry hijiki in 500 ml of water for about 30 minutes.
  2. Cook rice in a rice cooker.
  3. Cut carrot into matchsticks and shell edamame.
  4. Combine all seasoning ingredients in a small bowl.
  5. Heat sesame seed oil in a frying pan and cook chicken mince.
  6. Add carrot and edamame to the pan and cook for a few more minutes.
  7. Pour the combined seasoning over the chicken, carrot, and hijiki, and cook until the liquid evaporates.
  8. Once the rice is cooked, add the hijiki and chicken mixture on top and steam together for 10 minutes.
  9. Stir the hijiki and chicken into the rice, add edamame, and mix well.
  10. Serve in a rice bowl and garnish with sesame seeds and bean sprouts.
