Ingredients

The fish

  • 2 fillets wild Alaskan cod

The seasoning

  • to taste freshly ground black pepper
  • to taste Aleppo chilé finishing salt

The fat

  • 2 tablespoons coconut oil or fat of choice

Instructions

  1. Preheat your SousVide Supreme to 130°F.
  2. Place the frozen cod into the water bath for 30 minutes.
  3. Remove the fillets from the water and dry them off.
  4. Season the fillets with freshly ground pepper and Aleppo chilé finishing salt.
  5. Heat the coconut oil in a cast iron skillet on high heat.
  6. Sear the fish for 1 minute on each side.
  7. Serve with sautéed baby spinach and guacamole.
