Sous Vide Wild King Salmon

The seasoning and oil

Instructions
- Freeze olive oil in small containers for at least 2 hours.
- Cut the salmon fillet into 5 equal portions and season with salt and pepper.
- Vacuum-seal each fillet with a frozen cube of olive oil and a sprig of thyme.
- Place the sealed packets in a bowl of ice and refrigerate.
- Preheat the SousVide Supreme to 125°F.
- Cook the salmon packets in the preheated SousVide Supreme for 20 minutes.
- Serve the salmon directly from the packet for medium-rare, or sear on a skillet for a few minutes if less rare is desired.
