Ingredients

The salmon

  • 1 filet wild Alaskan sockeye salmon

The seasoning

  • to taste freshly ground black pepper
  • to taste Aleppo chile finishing salt
  • ½ lime lime

The cooking fat

  • 1 blob ghee

The side

  • 1 serving frozen green beans

Instructions

  1. Set the Sous Vide Supreme to 120°F.
  2. Place the frozen salmon filet directly into the water bath.
  3. Cook the salmon for 25 minutes.
  4. Remove the salmon from the bath and dry it off.
  5. Season the salmon with black pepper and Aleppo chile salt.
  6. Heat a cast iron skillet on high and add ghee.
  7. Once the ghee is smoking, sear both sides of the salmon.
  8. Serve the salmon with green beans and squeeze lime over the dish.
