Instructions
- Preheat the oven to 400°F for roasting the tomatoes.
- In a baking dish, combine the tomatoes, mashed garlic, olive oil, salt, and pepper. Toss to coat and roast for 15-20 minutes until blistered.
- While the tomatoes roast, cook the spaghetti according to package instructions until al dente. Reserve ¾ cup of pasta water before draining.
- In a blender, combine avocados, shallot, cilantro, garlic, lemon juice, maple syrup, cream cheese, salt, and red pepper flakes. Blend until smooth.
- Mix the sauce with the pasta, adding reserved pasta water as needed to achieve desired consistency.
- Fold in the roasted tomatoes and serve immediately.
