Ingredients

For the Roasted Tomatoes

  • 2 cups Cherry Tomatoes
  • 4 cloves Garlic
  • 3 tablespoons Olive Oil
  • to taste Salt and Pepper

For the Avocado Pasta

  • 1 package Spaghetti Pasta
  • 3 large Avocados
  • 1 large Shallot
  • ¾ cup Cilantro
  • 3 cloves Garlic
  • 1 lemon juiced
  • 2 tablespoons Maple Syrup
  • ½ cup Dairy-Free Cream Cheese
  • 1 teaspoon Salt
  • ½ teaspoon Crushed Red Pepper Flakes

Instructions

  1. Preheat the oven to 400°F for roasting the tomatoes.
  2. In a baking dish, combine the tomatoes, mashed garlic, olive oil, salt, and pepper. Toss to coat and roast for 15-20 minutes until blistered.
  3. While the tomatoes roast, cook the spaghetti according to package instructions until al dente. Reserve ¾ cup of pasta water before draining.
  4. In a blender, combine avocados, shallot, cilantro, garlic, lemon juice, maple syrup, cream cheese, salt, and red pepper flakes. Blend until smooth.
  5. Mix the sauce with the pasta, adding reserved pasta water as needed to achieve desired consistency.
  6. Fold in the roasted tomatoes and serve immediately.
