Ingredients

The pasta

  • 2 cups pasta shells

The sauce

  • ½ tablespoon coconut oil or olive oil
  • ½ red onion chopped
  • 3 cloves garlic, minced
  • 24 ounces tomato sauce
  • ¼ cup cashew cream
  • 1 tablespoon nutritional yeast
  • ¼ teaspoon sea salt

Instructions

  1. 1. Cook the pasta in salted boiling water according to package directions.
  2. 2. In a pan over medium-high heat, heat the oil and add the onions and garlic, sautéing until slightly browned.
  3. 3. Lower the heat to medium and stir in the tomato sauce, nutritional yeast, cashew cream, and sea salt, mixing well.
  4. 4. Add the cooked pasta to the sauce and stir to combine, cooking for about 3 minutes to allow the pasta to absorb the sauce.
  5. 5. Taste and adjust salt if necessary, then serve garnished with basil if desired.
