Homemade Berry Turnovers

Ingredients

Berry Filling

  • 1 teaspoon cornstarch
  • 1 teaspoon warm water
  • 1 cup mixed berries (about 150g)
  • tablespoons granulated sugar
  • 1 teaspoon lemon juice

Dough

  • 1⅓ cups all-purpose flour (spooned & leveled, about 166g)
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ¾ cup unsalted butter (very cold and cubed, about 170g)
  • 6–8 tablespoons ice cold water (90-120ml)

Egg Wash + Topping

  • 1 large egg
  • 2 tablespoons milk
  • to taste coarse sugar (optional for topping)
  • to taste vanilla icing (optional)

Instructions

  1. Prepare the berry filling by whisking cornstarch and warm water, then cooking mixed berries with sugar and lemon juice until thickened and cool.
  2. Make the dough by mixing flour, sugar, and salt, then incorporating cold butter and ice water until a shaggy dough forms.
  3. Pat the dough into a rectangle, fold it like a business letter, and refrigerate for at least 2 hours.
  4. Roll and fold the dough a total of 6 times, refrigerating for 15 minutes after the last fold.
  5. Roll the dough into a square and cut into 9 squares.
  6. Place a tablespoon of berry filling in the center of each square, fold into triangles, and crimp edges to seal.
  7. Chill the shaped turnovers for at least 15 minutes.
  8. Preheat the oven to 400°F (204°C) and prepare the egg wash.
  9. Brush the turnovers with egg wash, cut slits on top, and sprinkle with coarse sugar if desired.
  10. Bake for 22-25 minutes until golden brown, then cool before serving.
