Homemade Berry Turnovers

Instructions
- Prepare the berry filling by whisking cornstarch and warm water, then cooking mixed berries with sugar and lemon juice until thickened and cool.
- Make the dough by mixing flour, sugar, and salt, then incorporating cold butter and ice water until a shaggy dough forms.
- Pat the dough into a rectangle, fold it like a business letter, and refrigerate for at least 2 hours.
- Roll and fold the dough a total of 6 times, refrigerating for 15 minutes after the last fold.
- Roll the dough into a square and cut into 9 squares.
- Place a tablespoon of berry filling in the center of each square, fold into triangles, and crimp edges to seal.
- Chill the shaped turnovers for at least 15 minutes.
- Preheat the oven to 400°F (204°C) and prepare the egg wash.
- Brush the turnovers with egg wash, cut slits on top, and sprinkle with coarse sugar if desired.
- Bake for 22-25 minutes until golden brown, then cool before serving.
