Apple Turnovers

Instructions
- Prepare the puff pastry dough and keep it refrigerated.
- In a saucepan, cook the apples with cornstarch, vanilla, cinnamon, and sugar for about 10 minutes, then cool for 20 minutes.
- Line baking sheets with parchment paper.
- Roll out the dough and cut it into squares, placing them on the baking sheets.
- Add the apple filling to the center of each square, fold into triangles, and crimp the edges to seal.
- Chill the shaped turnovers for at least 15 minutes.
- Preheat the oven to 400°F (204°C), brush the turnovers with egg wash, and cut vents in the tops.
- Bake for 23–25 minutes until golden brown and cool for 5 minutes before drizzling with caramel sauce.
