Easy Apple Turnovers

Ingredients

The filling

  • 3 large Honeycrisp apples
  • 1 tablespoon unsalted butter
  • ¼ cup light brown sugar
  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • teaspoon salt
  • 1 tablespoon freshly squeezed lemon juice

The pastry and egg wash

  • 1 pound frozen puff pastry sheets
  • 1 large egg
  • 1-2 tablespoons heavy cream

The glaze

  • ½ cup powdered sugar
  • 1-2 tablespoons heavy cream

Instructions

  1. Thaw the puff pastry according to package instructions.
  2. Melt the butter in a pot, add diced apples, and cook for 6-8 minutes.
  3. Add brown sugar, cinnamon, lemon juice, and salt to the apples and cook for an additional 4-5 minutes until softened.
  4. Remove the apple mixture from heat and let it cool.
  5. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  6. Roll out puff pastry to 10-inch squares and cut each into four squares.
  7. Whisk together the egg and heavy cream for the egg wash.
  8. Place 2-3 tablespoons of the apple mixture in the center of each square and brush the edges with egg wash.
  9. Fold the pastry over to form triangles and crimp the edges with a fork.
  10. Place the turnovers on the baking sheet, cut slits on top, and brush with remaining egg wash.
  11. Bake for 20-22 minutes until golden brown.
  12. Mix powdered sugar and heavy cream to make the glaze and drizzle over warm turnovers before serving.
