Apple Pie Fold-Overs

Ingredients

The filling

  • 3 cups apples, peeled and chopped
  • ½ cup water
  • cup light brown sugar
  • ¼ teaspoon ground cinnamon
  • 1 pinch sea salt
  • 1 tablespoon flour
  • 1 teaspoon granulated sugar
  • 1 tablespoon butter

Cinnamon sugar

  • 1 tablespoon sugar
  • ¼ teaspoon cinnamon
  • 1 tablespoon butter, melted

Glaze

  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Tortillas

  • 6 pieces flour tortillas

Instructions

  1. Prepare the glaze by mixing powdered sugar, milk, and vanilla in a small bowl.
  2. Combine cinnamon and sugar for the cinnamon sugar mixture.
  3. In a small saucepan, combine apples and water, then cook on high heat until boiling.
  4. Reduce heat to low and simmer the apple mixture for 5 minutes.
  5. Stir in brown sugar, cinnamon, and a pinch of sea salt, then simmer for an additional 5 minutes.
  6. Combine flour and granulated sugar, then stir into the apple mixture and bring to a boil for 1 minute.
  7. Stir in butter and keep the apple mixture warm.
  8. Heat both sides of the flour tortillas on a skillet until they get some color.
  9. Brush one side of each tortilla with butter and sprinkle with cinnamon sugar.
  10. Return the tortillas to the skillet to caramelize the sugar until golden brown.
  11. Fill the un-sprinkled side of each tortilla with the apple mixture and fold over.
  12. Drizzle with the glaze and serve immediately, optionally garnished with fresh berries and whipped cream.
