Ingredients

The filling

  • 4 medium apples
  • 2-3 tablespoons butter
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 2 tablespoons cornstarch
  • 1 ½ tablespoons lemon juice

The dough

  • dough for two 9-inch pie crusts pie crust

Toppings

  • 1 egg egg
  • 1 tablespoon milk or water
  • to taste Demerara, Turbinado, or coarse sugar

Instructions

  1. Thaw pie crust for about 45 minutes before using.
  2. Preheat oven to 375°F and line a baking sheet with parchment paper.
  3. Roll out puff pastry and cut into desired shapes.
  4. In a saucepan, combine apples, butter, brown sugar, cinnamon, nutmeg, ginger, salt, cornstarch, and lemon juice, and simmer until thickened.
  5. Let the filling cool.
  6. Mix egg with milk or water for the egg wash.
  7. Scoop filling onto pastry squares, brush edges with egg wash, fold, and seal.
  8. Place turnovers on the baking sheet, brush with egg wash, and sprinkle with sugar.
  9. Bake for 15-18 minutes until golden brown.
