Mixed Berry Mini Tarts

Ingredients

  • 24 pieces wonton wrappers
  • 1 tablespoon powdered sugar
  • 1 tablespoon light butter
  • 1 cup diced strawberries
  • 1 cup raspberries
  • 1 cup blueberries
  • 3 tablespoons granulated sugar
  • 1 tablespoon corn starch
  • ¼ cup hot water

Instructions

  1. Preheat the oven to 350°F.
  2. Lightly mist 24 cups in a mini-muffin tin with cooking spray.
  3. Lay out the wonton wrappers and mist with cooking spray, then sprinkle with half of the powdered sugar.
  4. Flip the wrappers and mist the other side, sprinkling the remaining powdered sugar on top.
  5. Push each wonton wrapper into a slot of the mini muffin tray to form a cup.
  6. Bake the wonton cups for 8 minutes until brown and crispy.
  7. In a medium saucepan, melt the butter over medium heat, then add the berries and stir to coat.
  8. Cook the berries uncovered for about 5 minutes, stirring occasionally.
  9. Combine the corn starch and hot water in a small dish, then pour over the berries along with the sugar and stir to combine.
  10. Cover the saucepan and simmer the mixture on low heat for 3-5 minutes until thickened.
  11. Spoon the berry mixture evenly into the baked wonton cups and return to the oven for another 3-5 minutes.
