Ingredients

The Potatoes

  • 1 lb. new potatoes, cut into quarters

The Seasoning

  • 2 tablespoons olive oil
  • 2–3 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Wash and cut the potatoes into quarters.
  2. In a bowl, combine the potatoes with garlic, rosemary, thyme, salt, pepper, and olive oil, and toss to coat.
  3. Preheat the air fryer to 400°F for about 2 minutes.
  4. Place the seasoned potatoes in the air fryer basket in a single layer.
  5. Air fry for 10 minutes, then toss the potatoes and continue to cook for another 8-10 minutes until tender and browned.
  6. Let the potatoes cool slightly before serving.
