Ingredients

The dressing

  • cup tahini
  • 1 heaping Tbsp freshly peeled grated ginger
  • 2 cloves finely minced garlic
  • 1 heaping tsp yellow or white miso paste
  • 1 Tbsp coconut aminos
  • 1 Tbsp rice vinegar
  • 1 tsp toasted or untoasted sesame oil
  • 2 tsp maple syrup
  • 2-3 Tbsp water
  • 1 pinch sea salt (optional)

For serving (optional)

  • 3-4 cups chopped green kale
  • 1 cup grated/ribboned carrot
  • ¼ cup thinly sliced green onion
  • ½ cup thinly sliced red cabbage
  • ½ cup roasted salted cashews or peanuts, roughly chopped

Instructions

  1. Combine tahini, ginger, garlic, miso paste, coconut aminos, rice vinegar, sesame oil, and maple syrup in a mixing bowl.
  2. Whisk the ingredients together until well combined.
  3. Add water gradually until the desired creamy consistency is achieved.
  4. Taste and adjust flavors as needed, adding more vinegar, maple syrup, miso, ginger, garlic, or salt to your preference.
  5. Store leftovers in the refrigerator for up to 5-7 days or freeze for up to 1 month.
