Peanut Butter and Jelly Muffins

Instructions
- 1. Preheat the oven to 350°F and prepare 12 muffin cups with nonstick spray or paper liners.
- 2. In a medium bowl, whisk together the milk, peanut butter, oil, egg, and vanilla.
- 3. Combine the wet ingredients with the dry ingredients, mixing just until combined.
- 4. Fill each muffin cup with about 2 tablespoons of batter, add a heaping teaspoon of jam on top, then cover with another 2 tablespoons of batter.
- 5. Bake for 20 to 25 minutes until the muffins rise and are firm to the touch.
