Ingredients

The Caesar Dressing

  • 1 cup mayonnaise
  • ¼ cup lemon juice
  • 2 tablespoons Parmesan cheese
  • 2 tablespoons spicy brown mustard
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The Pasta Salad

  • 1 pound rotini
  • 1 pound chicken breast cutlets
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 large head romaine lettuce
  • 2 cups croutons
  • 8 ounces cooked bacon
  • ¼ cup Parmesan cheese

Instructions

  1. Prepare the Caesar dressing by whisking together mayonnaise, lemon juice, Parmesan cheese, mustard, Worcestershire sauce, salt, and pepper in a bowl. Refrigerate.
  2. Boil water in a large pot, add salt, and cook the rotini according to package instructions. Drain and rinse with cold water.
  3. Season the chicken with Cajun seasoning on both sides.
  4. Heat oil in a skillet and cook the chicken until it reaches 165°F, about 5 minutes on each side. Let it rest, then slice into strips.
  5. In a large bowl, combine cooled rotini, chopped lettuce, croutons, and crumbled bacon.
  6. Drizzle the salad with the dressing and toss to coat evenly.
  7. Top the salad with sliced chicken and garnish with additional Parmesan cheese.
