Ingredients

The Pasta Salad

  • 12 ounces Penne or Bowtie Pasta
  • 3 heads Romaine Lettuce
  • 1 cup Chicken, chopped
  • ½ cup Parmesan Cheese, grated

The Dressing

  • 1 ½ cups Plain Yogurt
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Worcestershire Sauce
  • 1 lemon juiced
  • 3 cloves Garlic, mashed
  • ¾ cup Parmesan Cheese, freshly grated
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Black Pepper

Instructions

  1. 1. Boil water in a large pot and cook the pasta until al dente, about 11-12 minutes.
  2. 2. Drain and rinse the pasta with cold water, then set aside.
  3. 3. In a blender, combine all dressing ingredients and blend until smooth and creamy.
  4. 4. Chop the romaine lettuce and place it in a large bowl.
  5. 5. Add the cooked pasta, chopped chicken, and parmesan cheese to the bowl with the lettuce.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or store dressing separately if making ahead.
