Ingredients

The Croutons

  • cup cubes sourdough bread
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • to taste salt & pepper
  • 1 tablespoon fresh parsley

The Dressing

  • 1 clove garlic
  • ¼ cup white vinegar
  • ¼ cup olive oil
  • 1 teaspoon Dijon mustard
  • a few dashes Tabasco
  • 1 tablespoon lemon juice
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon mayonnaise
  • 1 teaspoon honey

The Salad

  • 8 oz rotini pasta
  • 3 cups romaine lettuce
  • cups chopped cooked chicken
  • ¼ cup Parmesan cheese
  • 1 cup cherry tomatoes

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine cubed sourdough bread, olive oil, and minced garlic, then toss to coat.
  3. Spread the bread cubes in a single layer on a baking sheet and bake for 10 minutes, tossing halfway through.
  4. Remove the croutons from the oven and season with salt, pepper, and fresh parsley. Set aside to cool.
  5. In a food processor or blender, combine garlic, white vinegar, mustard, Tabasco, lemon juice, honey, and mayonnaise. Blend until minced.
  6. Add olive oil and grated Parmesan cheese to the mixture and blend until combined. Set aside.
  7. In a large bowl, combine chopped romaine lettuce, cooled rotini pasta, chicken, croutons, cherry tomatoes, and Parmesan cheese.
  8. Drizzle the Caesar dressing over the salad and gently toss to coat. Serve cold.
