Caesar Pasta Salad

Ingredients

The salad

  • 1 lb rotini pasta
  • 3 cups cubed sourdough bread
  • 2 tbsp butter
  • 10 oz chopped romaine
  • ½ cup shredded parmesan cheese

The dressing

  • ¾ cup plain Greek yogurt
  • ½ cup mayonnaise
  • ¼ cup parmesan cheese
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Dijon mustard
  • 2 tsp anchovy paste
  • 2 tbsp avocado oil
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Cook the pasta according to the package instructions, then drain and rinse with cold water.
  2. Melt butter in a pan, add sourdough bread cubes and salt, and cook until golden brown.
  3. In a bowl, whisk together all dressing ingredients until well combined.
  4. In a large bowl, combine the cooled pasta, chopped romaine, and parmesan cheese.
  5. Pour the dressing over the salad and toss to coat everything evenly.
  6. Top with croutons and additional parmesan cheese before serving.
