Ingredients

The coconut mixture

  • 2 ½ cups flaked coconut, unsweetened
  • ¼ cup coconut oil, melted
  • 1 tablespoon honey
  • ½ teaspoon vanilla
  • a pinch of sea salt

The chocolate topping

  • 4 ounces dark chocolate

Instructions

  1. Pulse the coconut in a food processor until sticky crumbs form, setting aside about ¼ cup of the mixture.
  2. Mix the coconut oil, honey, vanilla, and sea salt, then stir in the coconut from the first step.
  3. Form the mixture into small balls by squeezing it together tightly.
  4. Refrigerate the balls for about 1 hour until firm, reshaping if necessary.
  5. Toast the reserved coconut in a nonstick skillet over medium heat until lightly browned.
  6. Melt the chocolate in the microwave until smooth.
  7. Dip each coconut ball in the melted chocolate, letting excess drip off, and place on a parchment-lined baking sheet.
  8. Top with the toasted coconut and freeze or refrigerate to set the chocolate.
