Naturally Sweet Dark Chocolate Coconut Bites

Instructions
- Pulse the coconut in a food processor until sticky crumbs form, setting aside about ¼ cup of the mixture.
- Mix the coconut oil, honey, vanilla, and sea salt, then stir in the coconut from the first step.
- Form the mixture into small balls by squeezing it together tightly.
- Refrigerate the balls for about 1 hour until firm, reshaping if necessary.
- Toast the reserved coconut in a nonstick skillet over medium heat until lightly browned.
- Melt the chocolate in the microwave until smooth.
- Dip each coconut ball in the melted chocolate, letting excess drip off, and place on a parchment-lined baking sheet.
- Top with the toasted coconut and freeze or refrigerate to set the chocolate.
