Ingredients

The batter

  • 1 cup all-purpose flour
  • teaspoon salt
  • 4 ounces unsalted butter, melted and cooled to room temperature
  • 1 cup light brown sugar
  • 1 large egg
  • teaspoons vanilla extract
  • 1 cup sweetened flaked coconut
  • 1 cup chocolate chips or chunks

Topping

  • to taste More coconut for sprinkling on top

Instructions

  1. Preheat the oven to 350°F and spray an 8-inch square baking pan with cooking spray.
  2. Combine the flour and salt in a bowl, whisk together, and set aside.
  3. In another bowl, stir together the melted butter and brown sugar until smooth and creamy. Beat in the egg and vanilla extract until well blended.
  4. Slowly mix in the flour and salt mixture until just blended. Stir in the coconut and chocolate chips.
  5. Scrape the batter into the prepared pan, spreading it evenly. Sprinkle extra coconut on top.
  6. Bake for 25-30 minutes, until set in the center but still soft. Let cool slightly before cutting into squares.
