Strawberry Blondies with Coconut

The filling and topping

strawberry applesauce, unsweetened

fresh or frozen strawberries, sliced

shredded coconut, unsweetened
Instructions
- Preheat the oven to 350°F.
- Mix flax seeds with water and let it stand for 2 minutes.
- Add vanilla, coconut oil, and brown sugar; mix until smooth.
- Stir in flour, baking powder, and optional salt until just smooth.
- Spray an 8 x 8-inch baking dish with nonstick spray.
- Spread two-thirds of the dough in the bottom of the dish evenly.
- Spread strawberry applesauce over the dough and arrange sliced strawberries on top.
- Drop pieces of the remaining dough over the strawberry layer and sprinkle with coconut.
- Bake for about 55 minutes until firm and golden brown.
- Cool for 10 minutes before slicing into 16 bars.
