Strawberry Blondies with Coconut

Ingredients

The blondie base

  • 2 tablespoons ground flax seeds
  • ¼ cup water
  • 1 teaspoon vanilla
  • ½ cup coconut oil
  • ¼ cup brown sugar
  • 1 ½ cups whole wheat flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt (optional)

The filling and topping

  • 1 4-ounce container strawberry applesauce, unsweetened
  • 1 cup fresh or frozen strawberries, sliced
  • 2 tablespoons shredded coconut, unsweetened

Instructions

  1. Preheat the oven to 350°F.
  2. Mix flax seeds with water and let it stand for 2 minutes.
  3. Add vanilla, coconut oil, and brown sugar; mix until smooth.
  4. Stir in flour, baking powder, and optional salt until just smooth.
  5. Spray an 8 x 8-inch baking dish with nonstick spray.
  6. Spread two-thirds of the dough in the bottom of the dish evenly.
  7. Spread strawberry applesauce over the dough and arrange sliced strawberries on top.
  8. Drop pieces of the remaining dough over the strawberry layer and sprinkle with coconut.
  9. Bake for about 55 minutes until firm and golden brown.
  10. Cool for 10 minutes before slicing into 16 bars.
