Instructions
- Preheat the oven to 350°F and grease a 9×13 inch pan.
- In a small bowl, mix the flaxseed meal and water, and set aside to thicken.
- In a medium bowl, whisk together gluten free flour, baking powder, and salt.
- In a stand mixer, combine applesauce, coconut milk, melted coconut oil, maple syrup, vanilla extract, and the flax egg mixture.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Stir in the chocolate chips by hand.
- Transfer the batter to the prepared pan and bake for about 35 minutes until set and golden.
- Cool on a wire rack before cutting into 12 blondies.
