Ingredients

  • 1 tbs flaxseed meal
  • 2 ½ tbs water
  • 2 ¼ cups gluten free flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ cup applesauce
  • ½ cup coconut milk
  • ½ cup melted coconut oil
  • 1 cup pure maple syrup
  • 2 tsp vanilla extract
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch pan.
  2. In a small bowl, mix the flaxseed meal and water, and set aside to thicken.
  3. In a medium bowl, whisk together gluten free flour, baking powder, and salt.
  4. In a stand mixer, combine applesauce, coconut milk, melted coconut oil, maple syrup, vanilla extract, and the flax egg mixture.
  5. Add the dry ingredients to the wet ingredients and mix until combined.
  6. Stir in the chocolate chips by hand.
  7. Transfer the batter to the prepared pan and bake for about 35 minutes until set and golden.
  8. Cool on a wire rack before cutting into 12 blondies.
