Vegan Almond Butter Blondies

Ingredients

  • cup almond butter
  • ½ cup sweetened almond milk
  • ¾ cup coconut sugar
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • ¼ cup almond meal
  • ½ cup rolled oats
  • ¼ tsp baking soda
  • ¼ tsp ground cinnamon
  • 1 pinch salt
  • ¾ cup vegan chocolate chips

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line an 8-inch square baking pan.
  2. In a large mixing bowl, combine almond butter, almond milk, coconut sugar, and vanilla extract. Beat until smooth.
  3. Add flour, almond meal, oats, baking soda, cinnamon, and salt to the mixture and fold until combined.
  4. Fold in the vegan chocolate chips.
  5. Spoon the batter into the prepared baking pan and smooth the top.
  6. Bake for about 25 minutes until golden-brown and dry to the touch.
  7. Remove from the oven and let cool on a rack before cutting into squares.
