Ingredients

The batter

  • 1 cup creamy almond butter
  • ½ cup coconut sugar
  • 2 large eggs (or 1 flax egg)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup dark chocolate chips

For greasing

  • as needed none oil (e.g., coconut oil or cooking spray)

Instructions

  1. Preheat the oven to 350ºF and prepare an 8-inch square baking pan by greasing it and lining it with parchment paper.
  2. In a large bowl, combine almond butter, coconut sugar, eggs (or flax egg), vanilla extract, baking powder, and salt. Stir until thick and uniform.
  3. Fold in ½ cup of chocolate chips, then transfer the batter to the prepared pan and flatten it evenly.
  4. Sprinkle the remaining ¼ cup of chocolate chips on top, then bake for 22 to 25 minutes until puffed and lightly golden.
  5. Let the blondies cool completely in the pan before lifting them out using the parchment paper and slicing into 16 squares.
  6. Store leftovers in an airtight container in the fridge for up to 5 days.
