Almond Butter Blondies

Instructions
- Preheat the oven to 350ºF and prepare an 8-inch square baking pan by greasing it and lining it with parchment paper.
- In a large bowl, combine almond butter, coconut sugar, eggs (or flax egg), vanilla extract, baking powder, and salt. Stir until thick and uniform.
- Fold in ½ cup of chocolate chips, then transfer the batter to the prepared pan and flatten it evenly.
- Sprinkle the remaining ¼ cup of chocolate chips on top, then bake for 22 to 25 minutes until puffed and lightly golden.
- Let the blondies cool completely in the pan before lifting them out using the parchment paper and slicing into 16 squares.
- Store leftovers in an airtight container in the fridge for up to 5 days.
