Ingredients

The batter

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, melted
  • cups packed light or dark brown sugar
  • 1 large egg
  • 1 egg yolk egg yolk
  • 1 tablespoon pure vanilla extract

The mix-ins

  • 1 cup sweetened shredded coconut
  • 1 cup dark or semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9×13-inch pan.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, combine the melted butter and brown sugar, then whisk in the egg, egg yolk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined, then fold in the coconut and chocolate chips.
  5. Spread the batter evenly in the prepared pan and bake for about 35 minutes until a toothpick comes out mostly clean.
  6. Allow the blondies to cool completely in the pan before cutting.
