Instructions
- Line a large baking tray with parchment paper.
- Blend the shredded coconut in a food processor until fine, then add sugar and blend again.
- Add coconut milk and blend until a thick dough forms, then transfer to a bowl.
- Scoop the dough into cookie shapes and place on the tray, then freeze until firm.
- Melt the chocolate chips and dip each cookie until fully coated, then refrigerate until set.
