Chocolate Coconut Butter Banana Bites

Instructions
- 1. Prepare a baking sheet or plate with parchment paper or a non-stick mat.
- 2. Process shredded coconut in a food processor for about 8 minutes until it becomes a liquidy coconut butter, then mix in salt, extract, and icing sugar until smooth.
- 3. Melt chocolate chips with oil in the microwave, stirring frequently, then mix into the coconut butter until combined.
- 4. Slice bananas into 1-inch pieces and dip each piece into the chocolate coconut butter, tapping off excess.
- 5. Place dipped bananas on the prepared sheet and freeze for 10-15 minutes until set.
