One Pot Chicken Parmesan Pasta

jarred tomato sauce

parmesan cheese

shredded mozzarella cheese

Instructions
- Heat 2 tbsp of avocado oil in a large skillet or dutch oven and add the chicken.
- Season the chicken with Italian seasoning, garlic powder, onion powder, salt, and pepper, cooking for 5-7 minutes until no longer pink.
- Remove the chicken from the pan and set aside.
- Add 1 tbsp of avocado oil to the pan, then add diced onions and minced garlic, cooking for 4-5 minutes until softened.
- Add uncooked pasta, tomato sauce, and chicken broth to the pan, cover, and bring to a boil.
- Once boiling, reduce heat to medium and cook for 15-20 minutes, stirring occasionally, until all liquid is absorbed.
- Stir in the cooked chicken and ½ cup of mozzarella cheese, then turn off the heat.
- Top with the remaining mozzarella and parmesan cheese, allowing it to melt as it cools.
- Sprinkle with fresh parsley before serving.
