One Pot Chicken Parmesan Pasta

Ingredients

The chicken

  • 3 large chicken breasts, cut into small cubes
  • 2 tbsp avocado oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp pepper

The sauce and pasta

  • 1 tbsp avocado oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 16 oz brown rice pasta
  • 2.5 cups jarred tomato sauce
  • 3.5 cups chicken broth
  • ½ cup parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • to taste fresh parsley for garnish

Instructions

  1. Heat 2 tbsp of avocado oil in a large skillet or dutch oven and add the chicken.
  2. Season the chicken with Italian seasoning, garlic powder, onion powder, salt, and pepper, cooking for 5-7 minutes until no longer pink.
  3. Remove the chicken from the pan and set aside.
  4. Add 1 tbsp of avocado oil to the pan, then add diced onions and minced garlic, cooking for 4-5 minutes until softened.
  5. Add uncooked pasta, tomato sauce, and chicken broth to the pan, cover, and bring to a boil.
  6. Once boiling, reduce heat to medium and cook for 15-20 minutes, stirring occasionally, until all liquid is absorbed.
  7. Stir in the cooked chicken and ½ cup of mozzarella cheese, then turn off the heat.
  8. Top with the remaining mozzarella and parmesan cheese, allowing it to melt as it cools.
  9. Sprinkle with fresh parsley before serving.
