Ingredients

The pasta

  • 16 ounces penne pasta

The chicken

  • 1 pound boneless skinless chicken breast
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sea salt
  • 2 tablespoons avocado oil

The sauce

  • 3 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 3 tablespoons all-purpose flour
  • 2 cups half and half
  • 8 ounces cream cheese
  • 8 ounces shredded parmesan cheese

For serving

  • to taste fresh parsley
  • to taste black pepper
  • to taste crushed red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain and reserve 1 cup of pasta water.
  2. Pat the chicken dry and sprinkle with garlic powder, Italian seasoning, and salt. Refrigerate or proceed immediately.
  3. Heat a skillet to medium-high, add oil, and cook the chicken for 4 to 5 minutes per side until cooked through. Remove and dice.
  4. Lower heat to medium, melt butter in the pan, add garlic, and stir for 30 seconds. Whisk in flour for 2 minutes.
  5. Pour in half and half, whisk, then add cream cheese and cook for 3 to 4 minutes until smooth.
  6. Stir in ½ cup reserved pasta water to adjust the sauce consistency.
  7. Reduce heat to medium-low, add parmesan, and cook for 3 minutes, adding more pasta water as needed.
  8. Add chicken and cooked pasta to the pan. Garnish with extra parmesan and parsley, then serve warm.
