Ingredients

The sauce

  • 2 tsp extra-virgin olive oil
  • ½ small sweet onion, thinly sliced
  • 15 oz can tomato sauce
  • ¼ cup apple cider vinegar
  • ¼ cup black pepper sauce
  • 3 Tbsp honey
  • 2 Tbsp robust-flavored molasses
  • 2 Tbsp tomato paste
  • 1 Tbsp mustard powder
  • 1 Tbsp Worcestershire sauce
  • 1 tsp liquid smoke
  • ½ tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp freshly ground black pepper
  • ¼ tsp onion powder
  • 1 in piece ginger, peeled, coarsely chopped

The dough

  • 2 Tbsp vegetable oil
  • 1 Tbsp instant yeast
  • 2 tsp sugar
  • cups bread flour
  • 1 Tbsp kosher salt

The assembly

  • 8 oz beef bacon, coarsely chopped
  • 2 Tbsp sugar
  • 14 oz can crushed pineapple
  • 1 lb low-moisture mozzarella, coarsely grated
  • cup pickled jalapeños

Instructions

  1. Heat oil in a saucepan and cook onion until golden brown.
  2. Add remaining sauce ingredients and simmer until thickened.
  3. Purée the sauce until smooth.
  4. Prepare the dough by mixing yeast, sugar, and water, then adding flour and oil.
  5. Knead the dough until smooth and let it rise in a greased pan.
  6. Preheat the oven and press the risen dough into the pan.
  7. Parbake the dough until slightly golden.
  8. Cook the bacon in a skillet until done, then remove.
  9. Cook pineapple with sugar in the bacon fat until browned.
  10. Assemble the pizza with mozzarella, bacon, and pineapple, then bake until golden.
  11. Slice the pizza and drizzle with barbecue sauce and top with jalapeños.
