Barbecue Pineapple Jalapeño Pizza

Ingredients

The pizza

  • 1 batch easy whole wheat pizza dough
  • ½ cup barbecue sauce
  • 2 cups grated low-moisture, part-skim mozzarella cheese
  • pound fresh pineapple chunks
  • ¼ to ⅓ cup pickled jalapeños
  • ½ cup crumbled feta
  • 3 tablespoons finely chopped red onion

Optional garnishes

  • to taste red pepper flakes
  • to taste chopped fresh cilantro
  • to taste more barbecue sauce
  • to taste smoky hot sauce

Instructions

  1. Preheat the oven to 500°F with a rack in the upper third.
  2. Prepare the pizza dough and season the flour with black pepper.
  3. Spread ¼ cup of barbecue sauce on each pizza.
  4. Layer the toppings on each pizza: mozzarella, pineapple, jalapeños, feta, and onion.
  5. Bake each pizza on the top rack until the crust is golden and the cheese is bubbly, about 12 minutes.
  6. Slice the pizza and serve with optional garnishes.
