Instructions
- Preheat the oven to 350°F.
- Place the bread cubes and blueberries in an 8 x 8 inch baking dish.
- In a medium bowl, mix the eggs, coconut milk, honey, cinnamon, and vanilla.
- Pour the egg mixture over the bread and blueberries.
- Bake on the lower oven rack for 40-50 minutes.
- Remove from the oven and allow to set for 15 minutes before serving.
