Curried Apple Couscous

Ingredients

  • 1 cup whole wheat couscous
  • 1 ¾ cups water
  • 1 medium apple
  • 3 tablespoons unsalted butter
  • 1 tablespoon curry powder
  • 1 teaspoon sea salt
  • ½ cup pine nuts
  • small handful mint
  • 3 green onions

Instructions

  1. Melt 3 tablespoons of butter in a large saucepan over medium-high heat.
  2. Add curry powder and a couple of pinches of salt, cooking until fragrant.
  3. Stir in the chopped apple and cook for about 3 minutes until softened.
  4. Remove the apples and set aside.
  5. In the same pan, add the remaining tablespoon of butter and the sliced green onions, cooking until softened.
  6. Add water and salt, bringing to a boil.
  7. Stir in the couscous, cover, and remove from heat, letting it steam for 5 to 10 minutes.
  8. Fluff the couscous with a fork and stir in the cooked apples, toasted pine nuts, and chopped mint.
  9. Season with additional salt and curry powder to taste.
