Curried Apple Couscous

Instructions
- Melt 3 tablespoons of butter in a large saucepan over medium-high heat.
- Add curry powder and a couple of pinches of salt, cooking until fragrant.
- Stir in the chopped apple and cook for about 3 minutes until softened.
- Remove the apples and set aside.
- In the same pan, add the remaining tablespoon of butter and the sliced green onions, cooking until softened.
- Add water and salt, bringing to a boil.
- Stir in the couscous, cover, and remove from heat, letting it steam for 5 to 10 minutes.
- Fluff the couscous with a fork and stir in the cooked apples, toasted pine nuts, and chopped mint.
- Season with additional salt and curry powder to taste.
