Couscous Ingredients

cauliflower

coconut oil

cup
finely chopped onion

garlic

lime juice

Instructions
- Combine the spices and set aside.
- Cut the cauliflower into small uniform pieces and pulse in a food processor in batches.
- Heat coconut oil in a large pan over medium heat and cook onions and garlic until softened.
- Add the spice mix to the pan and cook for about 1 minute.
- Stir in the cauliflower 'couscous' and lime juice.
- Cover the pan and reduce heat to low, cooking for 10 minutes.
- Serve with fresh cilantro.
